All of these are really good questions too! But like Matan-san said, she DID play piano during Izawa's song in Bon Voyage, and during "Suberidai" on Ringo EXPO 08. I think she's just very self-conscious about her piano-playing, like her singing. I'm pretty sure she wouldn't do a whole R&B/soul album just because I think she's intimidated by other singers in that genre.
Along the lines of the 'covers' mystery, I'd ask her if she'd ever consider doing a second volume of Utaite Myori, esp. considering the fact she seemed so embarrassed about doing volume one in the first place.
