Eric Johnson - Cliffs of Dover and Living Colour - Cult of Personality. I like songs that challenge me, but aren't insanely hard so that it's frustrating rather than fun. And songs that are pretty good two. So these 3 fit into that category perfectly. I think the set lists have gradually worsened as the series has gone on, with Guitar Hero 3 being the one I've gone back to least (partially to do with Rock Band also).

late '60s to early '70s pop band where Vangelis come from

Aphrodite's Child - Rain and Tears

one of many Pachelbel's Canon in D adaptation
Aphrodite's Child - I Want To Live

another classical music adaptaion
Aphrodite's Child - Spring, Summer, Winter And Fall

this is too good to believe original
Aphrodite's Child - Aegian Sea

this one is more like Vangelis solo
